Ingredients
  

For the chicken

  • 2 large boneless, skinless chicken breasts, sliced thinly
  • to taste salt and pepper
  • 2 tablespoons olive oil for searing

For the sauce

  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes optional

For the pasta

  • 8 oz pasta (penne, rigatoni, or fettuccine)
  • Fresh basil for garnish

Preparation

  • Season the thinly sliced chicken breasts with salt and pepper.
  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken and sear until golden brown on both sides, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.
  • Reduce the heat to medium and add the minced garlic to the skillet, stirring until fragrant, about 30 seconds.
  • Toss in the chopped sun-dried tomatoes and cook for another minute.
  • Pour in the chicken broth and bring it to a simmer, scraping up any delicious bits stuck to the bottom.
  • Stir in the heavy cream, Parmesan cheese, Italian seasoning, and optional red pepper flakes. Allow the mixture to simmer and thicken slightly.
  • Meanwhile, cook the pasta according to package instructions until al dente. Drain and set aside.
  • Return the chicken to the sauce, stirring to coat. Add in the cooked pasta and mix well to combine it all.
  • Serve hot, garnished with fresh basil.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stove over low heat, adding a splash of chicken broth or cream if it seems too thick.
