For the Base

  • 1 cup pancake mix Use gluten-free pancake mix if needed.
  • 1/2 cup milk Any dairy alternative may be used.
  • 1 large egg Use a chia or flax 'egg' for egg-free.

For the Filling

  • 1/2 cup cooked sausage, crumbled Turkey or chicken sausage can be used.
  • 1/2 cup shredded cheddar cheese Opt for reduced-fat or sharp cheddar.

For Serving

  • to taste Maple syrup For dipping.

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin.
  • In a bowl, whisk together pancake mix, milk, and egg until smooth and lump-free.
  • Stir in cooked sausage and shredded cheddar cheese until evenly distributed.
  • Pour the batter into each cup of the mini muffin tin, filling about 3/4 full.
  • Bake for 12–15 minutes until golden and a toothpick inserted comes out clean.
  • Let them cool slightly, then carefully remove from the tin and serve warm.

Notes

Make-ahead: Prepare batter and ingredients the night before for fresh baking in the morning. Store baked bites in an airtight container in the refrigerator for up to 3 days.
