  • 3 large sweet potatoes, peeled and cut into 1-inch thick rounds
  • 3 tablespoons butter, melted (or olive oil for a dairy-free option)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ cup chicken broth or vegetable broth

Preparation

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  • Peel and slice the sweet potatoes into 1-inch thick rounds. Place them in a large mixing bowl.
  • Pour melted butter over the slices, then add salt, pepper, garlic powder, and smoked paprika. Toss well to coat evenly.

Cooking

  • Arrange the slices in a single layer on the baking sheet. Roast for 20 minutes, then flip each one and roast for another 15 minutes until golden brown and caramelized.
  • Pour the broth onto the baking sheet around the sweet potatoes (not directly on top). Return to the oven for 5 minutes so the broth can reduce into a buttery glaze.
  • Transfer to a serving dish, spoon the glaze over the top, and finish with chopped pecans, maple syrup, or fresh thyme if desired.

Notes

Cut evenly for uniform roasting. Use browned butter or add maple syrup for extra richness. Roast the potatoes in advance and reheat with broth right before serving. Serve alongside roasted chicken, turkey, or steak for a well-rounded meal.
