No-Bake 4th of July Swirl Pie

Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted

For the filling

  • 1 cup cream cheese, softened Make sure it is at room temperature.
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream Whip to stiff peaks.
  • 1 teaspoon vanilla extract

For the berry swirl

  • 1 cup mixed berries (strawberries, blueberries, raspberries) Can substitute with seasonal fruits like peaches or cherries.
  • 0.25 cups sugar For the berry swirl.

Preparation

  • In a medium bowl, combine the graham cracker crumbs with the melted butter until well mixed. Press this mixture evenly into the bottom of a pie dish to form your crust. Refrigerate for about 30 minutes.
  • In a separate bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy.
  • In another bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until smooth.
  • For the berry swirl, blend the mixed berries with the 1/4 cup of sugar until pureed. Strain if desired.
  • Pour half of the cheesecake filling into the prepared crust. Drizzle some of the berry puree over the filling and use a knife to swirl. Repeat with the remaining filling and berry puree.
  • Cover the pie and refrigerate for at least 4 hours or until set. Serve chilled.

Notes

Store leftovers in an airtight container in the refrigerator for 4-5 days. Do not freeze. Optionally serve with vanilla ice cream or additional berries.
