Ingredients

For the crust

  • 1 package Oreo cookies for the crust
  • 1/4 cup melted butter to bind the crust

For the cheesecake filling

  • 2 cups cream cheese the star of the cheesecake
  • 1 cup powdered sugar for sweetness
  • 1 teaspoon vanilla extract for flavor
  • 1 cup whipped cream for lightness
  • to taste none Pop Rocks candy for garnish
  • to taste none Red and blue food coloring optional, for festive layers

Instructions

Preparation

  • Crush the Oreo cookies into fine crumbs and mix them with the melted butter. Press this mixture firmly into the bottom of a springform pan to form a solid base.
  • In a large mixing bowl, beat the cream cheese until it achieves a smooth texture. Then, gradually add the powdered sugar along with the vanilla extract, mixing until it’s fully combined.
  • Gently fold in the whipped cream to add lightness to the mixture, being careful not to deflate it.
  • If you’d like, divide the cream cheese mixture. Add red food coloring to one half and blue to the other, mixing until the colors are vibrant.
  • Spoon the red and blue mixtures alternately on top of the crust to create a layered effect.
  • Cover the springform pan with plastic wrap and chill in the refrigerator for at least 4 hours, or until set.
  • Just before serving, sprinkle a generous amount of Pop Rocks candy on top for that explosive fun!

Notes

To keep your cheesecake fresh, store any leftovers in the refrigerator, covered tightly with plastic wrap or in an airtight container. This cheesecake will remain delicious for about three to four days.
