  • 1 lb ground beef (lean, 90/10 works best)
  • 2 tbsp olive oil Divided for cooking
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1.5 lbs baby potatoes, thinly sliced into rounds
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp chili flakes (optional)
  • 1 tsp salt Adjust to taste
  • ½ tsp black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup mozzarella cheese
  • ½ cup sour cream (or Greek yogurt)
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions
 

Preparation

  • Heat 1 tbsp olive oil in a large skillet over medium heat. Add the ground beef and cook for 6–7 minutes, breaking it apart with a spoon until browned. Remove beef and set aside.
  • In the same skillet, add remaining olive oil, onion, and garlic. Sauté for 2 minutes until fragrant.
  • Add sliced potatoes, smoked paprika, oregano, salt, and pepper. Stir to coat, then cover and cook for 10–12 minutes, stirring occasionally until potatoes are golden and tender.
  • Return the beef to the skillet. Stir in sour cream (or Greek yogurt) until everything is coated in a creamy sauce.
  • Sprinkle cheddar and mozzarella evenly on top. Cover with a lid and cook on low for 5 minutes until the cheese melts.
  • Garnish with parsley, serve hot, and enjoy your one-pan wonder!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in the skillet. Switching beef for ground chicken or turkey is a lighter option.
