  • 2 lbs chicken pieces (thighs, drumsticks, or breasts)
  • 2 tablespoons olive oil
  • 1 cup rice (long-grain works best)
  • 2 cups chicken broth
  • 1 cup frozen peas

Vegetables and Seasoning

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 medium bell pepper, chopped (any color)
  • 1 teaspoon paprika

Cooking

  • Heat olive oil in a large pot over medium heat.
  • Add chicken pieces, seasoning them with salt, pepper, and paprika. Sear until browned on all sides.
  • Remove chicken and set aside. In the same pot, toss in onion, garlic, and bell pepper. Sauté until softened.
  • Stir in rice, coating it well with the oil. Then, pour in chicken broth.
  • Return the chicken to the pot and bring the mixture to a boil.
  • Lower the heat, cover, and let it simmer for about 20–25 minutes, until the rice is tender and the chicken is cooked through.
  • Fold in frozen peas and cook for an additional 5 minutes.
  • Serve warm and enjoy!

Notes

For more flavor, marinate the chicken in paprika, salt, and pepper for at least 30 minutes before cooking. Don't skip browning the chicken; it adds a depth of flavor you won't want to miss. Always let the pot rest covered for a few minutes after cooking to allow the flavors to develop. Store leftovers in an airtight container in the refrigerator for up to three days or freeze portions for up to three months.
