  • 2 cups elbow macaroni (uncooked)
  • 4 cups whole milk
  • 2 tablespoons butter
  • 2 cups shredded sharp cheddar cheese Always shred your cheese from a block for better melting.
  • ½ cup shredded mozzarella cheese
  • ½ teaspoon smoked paprika
  • ½ teaspoon fresh thyme leaves Plus more for garnish.
  • Salt and black pepper, to taste

  • Add macaroni and milk to a large pot. Bring to a gentle simmer over medium heat, stirring often so it doesn’t stick.
  • Let the pasta cook uncovered for 10–12 minutes, stirring occasionally, until tender and most of the milk has thickened.
  • Reduce heat to low. Stir in butter until melted, then add cheddar and mozzarella a handful at a time. Keep stirring until smooth and creamy.
  • Sprinkle in smoked paprika, thyme, salt, and black pepper. Stir until combined and the sauce is glossy.
  • Spoon into bowls and garnish with extra thyme and paprika for color and flavor.

Notes

Add a splash of milk or cream if the sauce thickens too much while standing. Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently with a little milk. Stir in cooked chicken, spinach, or steamed broccoli for a heartier meal.
