Main ingredients

  • 4 large large onions, thinly sliced Can substitute with white or yellow onions.
  • 4 strips bacon, chopped Crispy bacon adds flavor.
  • 1/2 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes Optional, but recommended for some heat.
  • 1 tablespoon olive oil If needed for cooking onions.

Preparation

  • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the bacon fat in the skillet.
  • If the skillet looks dry, add a tablespoon of olive oil. Toss in the sliced onions and cook over medium-low heat, stirring occasionally for about 25-30 minutes until caramelized and golden brown.
  • Add brown sugar, apple cider vinegar, salt, black pepper, and optional red pepper flakes. Stir and let it cook for an additional 10-15 minutes until thickened.
  • Toss the crispy bacon back into the skillet and cook for a few more minutes to meld the flavors.
  • Remove from heat and allow to cool.

Notes

Store in an airtight container in the refrigerator for about one week or freeze for up to three months. Reheat gently on the stove.
