  • 2 pieces filet mignon steaks (6–8 oz each, 1.5–2 inches thick) Choose high-quality cuts for best results.
  • 1 tbsp kosher salt Season generously.
  • 1 tsp freshly ground black pepper For added flavor.
  • 2 tbsp avocado oil Or another high smoke-point oil.
  • 3 tbsp unsalted butter For basting.
  • 2 cloves garlic, crushed Enhances flavor during basting.
  • 2 sprigs fresh thyme Can substitute with other fresh herbs.

Preparation

  • Preheat your oven to 275°F (135°C) and place a sturdy oven-safe skillet on the stovetop.
  • Pat the steaks dry with paper towels. Season them generously with kosher salt and black pepper. Let them sit at room temperature for about 30 minutes.

Searing

  • Heat the skillet over high heat and pour in the avocado oil.
  • Sear the steaks for about 2 minutes on each side until a deep brown crust forms.
  • Lower the heat to medium, add the butter, crushed garlic, and thyme. Baste the steaks for about a minute as the butter melts.

Baking

  • Carefully transfer the skillet to the preheated oven. Bake until the internal temperature reaches 125–128°F for medium-rare; this should take around 8-12 minutes.
  • Remove the skillet from the oven and let the steaks rest loosely covered with foil for about 10 minutes before slicing and serving.

Notes

Store leftover filet mignon wrapped tightly in plastic wrap or in an airtight container for up to 3 days. Reheat gently in a skillet over low heat. For best results, use a meat thermometer and let the steaks rest after seasoning.
