Ingredients
  

Pasta Dough Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs Use egg substitutes if needed
  • 1/2 teaspoon salt
  • Water (as needed for dough consistency)
  • Semolina flour (for dusting)

Instructions
 

Preparation

  • Place the flour on a clean surface or in a mixing bowl, then make a well in the center.
  • Crack the eggs into this well and add the salt.
  • Using a fork, gradually stir to mix the flour into the eggs until the dough starts to form.
  • Knead the mixture for about 10 minutes until the dough is smooth and elastic, adding water if necessary to achieve the right texture.
  • Wrap the dough tightly in plastic wrap and let it rest for 30 minutes.

Rolling & Shaping

  • Once rested, roll the dough out thinly using either a rolling pin or a pasta machine.
  • Cut the rolled-out dough into your desired shapes such as tagliatelle or farfalle.
  • Dust the cut pasta with semolina flour to prevent any sticking.

Cooking

  • Cook your fresh pasta in boiling salted water for 2-4 minutes, depending on the thickness, then drain and enjoy!

Notes

Refrigerate leftover pasta for up to 2 days. For longer storage, freeze pasta in a single layer then transfer to a freezer bag for up to a month.
