Ingredients
  

For the Cake

  • 1 box vanilla cake mix
  • as specified Eggs, oil, and water (as specified on the cake mix)

For the Poke Jello

  • 1 package red gelatin (strawberry)
  • 1 package blue gelatin (berry blue)

For the Topping

  • 1 tub whipped topping (or homemade whipped cream)
  • as needed Fresh strawberries and blueberries for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish.
  • Prepare the vanilla cake mix according to package instructions and pour it into the baking dish.
  • Bake the cake for 25-30 minutes, or until a toothpick comes out clean. Let it cool completely in the pan.
  • Once cooled, use the handle of a wooden spoon or a straw to poke holes all over the cake.
  • Prepare the red gelatin and blue gelatin according to the package instructions.

Assembly

  • Pour the red gelatin over half of the cake and the blue gelatin over the other half, ensuring it seeps into the holes.
  • Refrigerate the cake for at least 2 hours to set the gelatin.
  • After setting, top the cake with whipped topping. Garnish with fresh strawberries and blueberries.
  • Cut into squares and serve chilled.

Notes

For best results, ensure your cake has completely cooled before poking holes. If you're short on time, ready-made whipped topping works just as well as homemade. Store leftovers in the refrigerator for up to 3-4 days. This dessert doesn’t freeze well due to the whipped topping and jello.
