Ingredients
  

  • 1 lb ground beef or turkey for a leaner option
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 can 15 oz diced tomatoes
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 2 cups beef broth or vegetable broth
  • 1/2 cup peanut butter creamy or chunky
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper optional for extra heat
  • 1 tbsp olive oil

Instructions
 

  • Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3 minutes until softened. Stir in garlic and cook for another 30 seconds.
  • Brown the Meat: Add ground beef (or turkey) and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
  • Simmer the Chili: Stir in diced tomatoes, kidney beans, black beans, and broth. Add chili powder, cumin, paprika, salt, black pepper, and cayenne. Mix well.
  • Incorporate Peanut Butter: Reduce heat to low, stir in peanut butter, and let simmer for 20 minutes, stirring occasionally.
  • Adjust & Serve: Taste and adjust seasoning if needed. Serve hot with your favorite toppings like cilantro, cheese, or sour cream.
