  • 3 medium potatoes, peeled and boiled About 1 lb
  • 1/4 cup cornflour or potato starch
  • 1/4 cup breadcrumbs
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 2 tbsp chopped fresh parsley Optional
  • 1 tbsp grated Parmesan cheese Optional
  • Oil for frying or brushing If baking

Preparation

  • Cut the peeled potatoes into chunks and boil them in salted water for 12–15 minutes until soft. Drain completely to remove excess moisture.
  • Mash the potatoes while warm until smooth and lump-free. Let them cool slightly.
  • In a mixing bowl, combine the mashed potatoes, cornflour, breadcrumbs, salt, black pepper, paprika, garlic powder, parsley, and Parmesan cheese if using. Mix until you get a firm, moldable dough.
  • Roll portions of the dough into long, even sticks and place them on a parchment-lined tray.

Cooking

  • To fry: Heat oil in a frying pan over medium heat. Fry the potato sticks in batches for 3–4 minutes until crisp and golden brown.
  • To bake: Brush each stick lightly with oil and bake at 400°F (200°C) for 20–25 minutes, flipping halfway through for even crispness.

Serving

  • Let the potato sticks cool for a minute or two, then serve hot with ketchup, garlic mayo, or your favorite dipping sauce.

Notes

Extra Crunch: Double-coat the sticks with breadcrumbs for a thicker, crispier texture. Make Ahead: Prepare the dough and shape the sticks in advance, then refrigerate for up to 24 hours before cooking. Air Fry Option: Air fry at 375°F (190°C) for 12–15 minutes for a lighter version. Serving Suggestion: Pair with ranch dressing, barbecue sauce, or spicy cheese dip for an extra punch of flavor.
