Ingredients
  

Pumpkin Loaf

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 cup pumpkin puree
  • 2 large eggs
  • ½ cup vegetable oil (or melted butter)
  • ¾ cup brown sugar, packed
  • 1 teaspoon vanilla extract

Streusel Topping

  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • ½ teaspoon cinnamon
  • 4 tablespoons unsalted butter, melted

Maple Drizzle

  • ½ cup powdered sugar
  • 2 tablespoons pure maple syrup
  • 1–2 teaspoons milk (to thin, if needed)

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  • In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  • In another bowl, whisk pumpkin puree, eggs, oil, brown sugar, and vanilla until smooth.
  • Fold wet ingredients into dry mixture until just combined (do not overmix 🙂).
  • Pour batter into prepared loaf pan.

Streusel Topping

  • In a small bowl, mix flour, sugars, cinnamon, and melted butter until crumbly. Sprinkle evenly over batter.

Baking

  • Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
  • Let loaf cool in the pan for 15 minutes, then transfer to a cooling rack.

Maple Drizzle

  • In a small bowl, whisk together powdered sugar and maple syrup. Drizzle over cooled loaf.

Serving

  • Slice, serve, and enjoy with coffee or tea!

Notes

Storage: Keep leftovers in an airtight container at room temperature for 3 days or refrigerate for up to a week. Freezer-Friendly: Freeze slices individually for up to 2 months, then thaw at room temp. Streusel Tip: For extra crunch, chill the streusel topping in the fridge for 10 minutes before sprinkling on the loaf.
