  • 8 oz block of feta cheese, drained from brine (around 220 grams)
  • 1/4 cup plain Greek yogurt Can substitute with sour cream
  • 1 cup canned pumpkin puree unsweetened
  • 1-2 Tbsp honey (plus more for serving)
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • Freshly cracked black pepper
  • Fresh thyme (for garnish)
  • Chopped walnuts (raw or toasted, optional)
  • Crusty, toasted bread (like sourdough or baguette)
  • Crackers

Preparation

  • In a food processor, combine the drained feta cheese and Greek yogurt. Blend until smooth, scraping down the sides as necessary.
  • Introduce the pumpkin puree, 1 to 2 tablespoons of honey, thyme, and a few cracks of black pepper. Blend until everything is well-combined.
  • Cover the mixture and transfer it to the fridge for 30-60 minutes to help the dip set and the flavors to mingle.
  • When ready to enjoy, scoop the whipped feta into a serving bowl. Garnish with optional chopped walnuts, a sprinkle of fresh thyme, a drizzle of honey, and additional black pepper if desired.

  • Serve this delightful dip with crusty toasted bread or your favorite crackers.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. For a warm option, gently reheat in the microwave in short bursts, stirring occasionally.
