  • 4 large large eggs
  • 2 pieces corn tortillas
  • 1 cup black beans (canned or cooked) Can substitute with pinto beans.
  • 1/2 cup salsa Fresh salsa for extra kick recommended.
  • 1 piece avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • to taste hot sauce
  • to taste tablespoon olive oil
  • to taste salt and pepper

Preparation

  • Heat a drizzle of olive oil in a skillet over medium heat.
  • Slightly toast the corn tortillas until golden brown, then remove them from the pan and set aside.
  • In the same skillet, crack the eggs and cook to your preferred doneness, sunny-side-up or scrambled.
  • Warm the black beans in the skillet or microwave until heated through.
  • To assemble, place one tortilla on a plate, layer it with a generous scoop of black beans, a fried egg, a spoonful of salsa, and slices of avocado.
  • Garnish with fresh cilantro, add hot sauce to taste, and season with salt and pepper.
  • Serve immediately and enjoy!

Notes

For leftovers, store in an airtight container in the refrigerator for up to three days. Reheat gently in the microwave or skillet. Avoid refreezing once cooked.
