For the Swirl

  • 1/2 cup raspberry jam The star of the show!

For Dusting

  • to taste powdered sugar Adds a lovely finishing touch.

Preparation

  • Preheat your oven to 375°F (190°C). Grease and line a 15×10-inch jelly roll pan with parchment paper.
  • In a mixing bowl, combine the flour, baking powder, and salt.
  • In another large bowl, beat the eggs and sugar until light and fluffy.
  • Add the vanilla extract and mix well.
  • Gradually fold in the dry mixture and add the milk, stirring gently until smooth.
  • Spread the batter evenly in the prepared pan.
  • Spoon the raspberry jam over the batter and use a knife to swirl it through.

Baking

  • Bake for 12-15 minutes until the cake springs back when touched.
  • Once baked, roll the cake, while it’s still warm, in a towel that’s dusted with powdered sugar.
  • Let it cool, then unroll, fill with more raspberry jam, and re-roll.
  • Finally, dust with powdered sugar before serving.

Notes

Feel free to experiment with different jams or adjust the sweetness according to your preference. Store leftovers in an airtight container in the fridge for up to three days, or wrap tightly and freeze for up to a month for later enjoyment.
