  • 3 pounds Beef roast (your choice of cut)

  • 2 tablespoons Olive oil For searing
  • 12 ounces Fresh cranberries Can substitute with frozen if out of season
  • 1/2 cup Balsamic vinegar For that sweet tang
  • 4 cloves Garlic cloves Minced for added flavor
  • 2 tablespoons Fresh rosemary For herby goodness
  • 2 tablespoons Fresh thyme To round out the flavor

Preparation

  • Preheat your oven to 350°F (175°C) to get ready for roasting.
  • Season the beef roast generously with salt and pepper to enhance the natural flavors.
  • Heat olive oil in a skillet over medium heat. Sear the beef on all sides until beautifully browned, sealing in the juices.
  • Transfer the seared roast to a baking dish and set aside.
  • In the same skillet, toss in fresh cranberries, balsamic vinegar, minced garlic, rosemary, and thyme. Cook until the cranberries burst and the mixture thickens slightly.
  • Pour this vibrant cranberry mixture over the beef roast, creating a luscious coating.

Cooking

  • Roast in the oven for about 1.5 to 2 hours, or until it reaches your desired doneness.
  • Once out of the oven, allow the roast to rest for at least 15 minutes before slicing. Drizzle the pan juices over the top for extra flavor!

Notes

Serve with garlic mashed potatoes, roasted vegetables, or a green salad. Great with a robust red wine.
