Ingredients
  

For the roasted sweet potatoes

  • 3 large sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil or melted butter
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon nutmeg (optional) for extra warmth
  • Fresh parsley or chopped pecans (for garnish)

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the sweet potato cubes, olive oil (or melted butter), cinnamon, salt, and pepper. Toss well until each piece is evenly coated.

Roasting

  • Arrange the potatoes in a single layer on the prepared baking sheet and roast for 25–30 minutes, flipping halfway through, until they are golden brown and tender inside.

Finishing Touches

  • Once out of the oven, drizzle the warm sweet potatoes with honey and gently toss to coat.
  • Transfer to a serving bowl and garnish with fresh parsley or chopped pecans. Serve warm.

Notes

For extra caramelization, let the potatoes roast undisturbed for the first 15 minutes before flipping. You can roast the potatoes in advance and reheat them in the oven at 375°F for 10 minutes before serving. Swap honey for maple syrup for a deeper flavor.
