  • 3 tbsp honey
  • 1 ½ tsp ground cinnamon

Preparation

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Peel sweet potatoes and cut them into even 1-inch cubes for uniform roasting.
  • In a large bowl, toss sweet potatoes with olive oil, honey, cinnamon, nutmeg, salt, and pepper until evenly coated.
  • Spread potatoes in a single layer on the prepared baking sheet.
  • Roast for 25–30 minutes, flipping halfway through, until golden brown and caramelized.
  • Transfer to a serving dish, drizzle with a little extra honey if desired, and sprinkle with parsley before serving.

Notes

Crispier Finish: Roast at 425°F for deeper caramelization. Make Ahead: Peel and cube the potatoes up to a day ahead and refrigerate in cold water. Drain and pat dry before roasting.
