  • 1 pound Tater tots Frozen or homemade, based on preference.
  • 1 pound Breakfast sausage Can use ground sausage or sausage links.
  • 4 ounces Cream cheese Softened for easier mixing.
  • 3 large Eggs Scrambled until fully cooked.
  • 1 cup Shredded cheddar cheese Feel free to experiment with different cheese types.
  • to taste Salt and pepper Use according to personal preference.

Preparation

  • Preheat your oven according to the tater tots package instructions.
  • In a skillet, cook the sausage over medium heat until browned. Drain excess fat and set aside.
  • In the same skillet, scramble the eggs until fully cooked.
  • In a mixing bowl, combine the cooked sausage, scrambled eggs, cream cheese, shredded cheddar cheese, salt, and pepper.
  • Take each tater tot and carefully squeeze it to create a small pocket.
  • Fill the pocket of each tater tot with the sausage and egg mixture.
  • Arrange the filled tater tots on a baking sheet and bake them according to the package instructions or until golden brown.
  • Serve hot and enjoy your delicious breakfast tots!

Notes

Serve with fresh fruit salad or a light salad. You can add sriracha or your favorite hot sauce for a spicy kick. Store leftovers in an airtight container in the refrigerator for up to three days, or freeze for up to a month.
