Ingredients
  

Egg Filling

  • 4 large large eggs
  • 1 cup cooked sausage, crumbled
  • 1 cup shredded cheese (cheddar or your favorite variety)
  • 1 pinch salt
  • 1 pinch pepper

For Assembly

  • 4 large large tortillas
  • 1 tablespoon butter or oil for cooking

Preparation

  • In a bowl, whisk the eggs with a pinch of salt and pepper.
  • Heat butter or oil in a skillet over medium heat. Add the beaten eggs and scramble until they’re cooked through.
  • Incorporate the crumbled sausage and cheese into the eggs, stirring until the cheese is nice and melted.

Assembly

  • Lay each tortilla flat and divide the egg mixture evenly among them.
  • Starting from one end, roll each tortilla tightly to encase the filling.
  • If desired, grill the roll-ups in a skillet until they are golden brown on the outside.
  • Serve warm and enjoy!

Notes

These roll-ups are perfect for meal prep; store them in an airtight container in the refrigerator for up to three days. They can also be frozen for up to a month. To reheat, use a microwave or a skillet to re-crisp.
