  • 1 cup Turkey Fat (or Drippings) Collected from roasted turkey drippings.
  • 1 lb Ground Sausage Choose mild, spicy or sage sausage per preference.
  • 1/4 cup All-Purpose Flour Use equal parts fat and flour for the roux.
  • 2 cups Turkey or Chicken Stock Low-sodium is preferred, homemade for best flavor.
  • 1/2 cup Heavy Cream or Milk Optional for a creamier gravy.
  • To taste Salt and Pepper Adjust based on stock and sausage salt content.
  • Optional Herbs (Thyme, Sage, Parsley) For added flavor, adjust to taste.
  • Optional Smoked Paprika or Cayenne For an added smoky or spicy kick.

Preparation

  • Render turkey fat in a skillet over medium heat, adding ground sausage and breaking it into small crumbles as it browns.
  • Cook sausage until fully browned and slightly crispy, about 5-7 minutes.
  • Sprinkle flour over the sausage and turkey fat mixture and cook for 2-3 minutes to create a roux, stirring constantly.
  • Gradually add stock while whisking continuously to avoid lumps.
  • Let the gravy simmer for about 5-10 minutes to thicken and meld flavors.
  • Season the gravy to taste, adding optional cream at the end for richness.
  • Serve hot over biscuits, mashed potatoes, or your dish of choice.

Notes

Store leftover gravy in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat, adding stock or water to adjust consistency.
