  • 3 pcs eggs
  • 4 oz smoked beef, cubed Pork ham can be substituted.
  • 1 small Roma tomato, diced with seeds removed
  • 1/2 cup shredded cheese
  • 2 large tortillas

Preparation

  • In a large bowl, whisk the eggs until smooth. Add the cubed smoked beef and diced tomato, stirring to combine.
  • Heat a non-stick pan over medium-high heat, lightly grease, and pour in the egg mixture. Cook until the eggs are firm and set aside.

Cooking

  • Heat a griddle or large pan over medium heat. Place one tortilla on the pan and sprinkle half of the cheese over it.
  • Once the cheese begins to melt, spoon the cooked egg mixture evenly over the tortilla. Sprinkle with the remaining cheese and top with the second tortilla.
  • When the bottom tortilla turns lightly golden, carefully flip and brown the other side for about one minute, just until the cheese is fully melted.
  • Remove from the pan, slice into four or six triangles, and serve warm.

Notes

Add diced green peppers or spinach for extra flavor and nutrients. Use whole-wheat or high-fiber tortillas for a heartier, healthier twist. Prep the scramble ahead of time to make morning assembly even faster. Swap cheese varieties to change the flavor—cheddar, Monterey jack, and mozzarella all work beautifully.
