  • 2 medium-sized rotis You can use whole wheat or regular rotis.
  • 1 cup mixed stir-fried vegetables (bell peppers, carrots, and cabbage) Feel free to substitute with zucchini or bok choy.
  • 4 tablespoons Schezwan sauce More if you love heat.
  • 1 tablespoon oil Any neutral oil like canola or sunflower works.
  • Salt to taste
  • Chopped green onions for garnish

Preparation

  • In a pan, heat oil over medium heat.
  • Add your mixed vegetables and stir-fry until they are just tender.
  • Stir in the Schezwan sauce and a pinch of salt, mixing thoroughly.
  • Take a roti and place a generous portion of the stir-fried veggie mix in the center.
  • Tightly roll the roti around the filling.
  • Top with chopped green onions before serving.
  • Repeat the same for the second roti.
  • Enjoy your fresh rolls while they’re hot!

Notes

These rolls can be served with extra Schezwan sauce for dipping. They pair well with a side of raita or yogurt to balance the spiciness. Store leftovers in an airtight container in the refrigerator for 2-3 days and reheat in a skillet or microwave.
