  • 2 pounds chicken breasts, boneless and skinless
  • 1 pound baby carrots
  • 1 pound Yukon Gold potatoes, cut into wedges

Flavoring Ingredients

  • 14.5 ounces chicken broth (optional) For extra flavorful juices
  • ½ cup salted butter, melted
  • 3 tablespoons minced garlic
  • ¼ teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon ground thyme
  • 1 teaspoon dried parsley

Instructions
 

Preparation

  • Place the chicken breasts in the bottom of your Crockpot to ensure even cooking.
  • Melt the butter in a small microwave-safe bowl for about one minute.
  • Stir in the minced garlic, salt, pepper, thyme, and parsley until fully blended.
  • Pour one quarter of the butter mixture evenly over the chicken.
  • Add the baby carrots and potato wedges on top of the chicken.
  • Pour the remaining butter mixture over the vegetables and gently toss to coat.
  • Add one half cup of chicken broth for extra flavorful juices if desired.

Cooking

  • Cover and cook on HIGH for 3 to 4 hours or LOW for 6 hours, until the chicken is tender and the vegetables are soft.

Serving

  • Serve warm and spoon the garlic butter juices over each serving for a melt-in-your-mouth finish.

Notes

For a richer sauce, stir in a splash of heavy cream during the last 15 minutes. Perfect for meal prep and stores well for 3 to 4 days in the refrigerator. Try swapping in baby potatoes, sweet potatoes, or green beans for variety. Serve with rice, mashed potatoes, or warm bread to enjoy every bit of the garlic butter sauce.
