  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups cooked rice Use pre-cooked rice for faster preparation
  • Fresh parsley (for garnish) Adds fresh flavor

Preparation

  • In a slow cooker, place the chicken breasts.
  • Pour in the lemon juice and zest, chicken broth, and olive oil.
  • Add the minced garlic, dried thyme, dried rosemary, salt, and pepper.
  • Stir well to coat the chicken in the mixture.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
  • Once the chicken is done, shred it using two forks and mix it with the sauce.
  • Serve your lemon herb chicken over the fluffy cooked rice and garnish with fresh parsley.

Notes

Great with a simple green salad or roasted vegetables. For extra zest, add lemon wedges on the side. Store leftovers in an airtight container for up to 3 days, or freeze portions for up to 2 months.
