  • 4 pieces boneless, skinless chicken breasts
  • 1 cup pesto sauce
  • 2 cups chicken broth
  • 8 oz pasta (penne or rotini work great)
  • 1 cup shredded mozzarella cheese
  • to taste Salt and pepper
  • to serve Parmesan cheese (optional)

Instructions
 

Preparation

  • Place the chicken breasts in the bottom of your slow cooker.
  • Pour the pesto sauce and chicken broth over the chicken.
  • Cover the slow cooker and set it to cook on low for 4-5 hours, or until the chicken is fully cooked and easily shredded.
  • About 30 minutes before your chicken is done, cook the pasta according to the package instructions.
  • Once the chicken is ready, use two forks to shred it right in the slow cooker.
  • Stir in the cooked pasta and mozzarella cheese until well combined.
  • Season with salt and pepper to your liking. Serve it hot, garnished with grated Parmesan cheese if desired.

Notes

For added flavor, sauté some garlic before adding it to the slow cooker. You can add vegetables like spinach or bell peppers for extra nutrition. Serve with a side salad or garlic bread.
