Ingredients
  

For the Quesadillas

  • 1 lb ground beef (or ground chicken/turkey for lighter option)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese (or cheese blend)
  • ½ cup diced onion
  • ½ cup pickles, chopped (optional)
  • ¼ cup burger sauce or special sauce (optional for serving)

Preparation

  • Season ground beef with garlic powder, onion powder, salt, and pepper. Divide into 8 small balls.

Cooking

  • Heat a skillet over medium-high heat. Place a beef ball on the skillet and smash it flat with a spatula. Cook 2–3 minutes per side until browned and crispy at the edges. Repeat with remaining beef.
  • Remove patties and wipe skillet clean. Lower heat to medium.
  • Place a tortilla in the skillet, sprinkle with cheese, add 2 patties, onions, and pickles if using. Top with more cheese and fold tortilla in half.
  • Cook 2–3 minutes per side until golden and cheese is melted.
  • Repeat with remaining tortillas and fillings. Slice and serve with burger sauce or ketchup-mayo mix.

Notes

Pro Tips: Try pepper jack or mozzarella for a different twist. Cook and smash the beef patties ahead of time for meal prep. Brush tortillas lightly with butter or oil for crispier tortillas. Pair with fries, zucchini chips, or a side salad for a full meal.
