  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes with green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil For sautéing
  • Fresh cilantro for garnish

Preparation

  • In a large skillet, heat a drizzle of olive oil over medium heat.
  • Add the chopped onion and bell pepper. Sauté until they turn soft and aromatic, about 5 minutes.
  • Stir in minced garlic and ground beef. Cook until the beef is browned and cooked through, about 7-10 minutes.
  • Mix in the diced potatoes, can of diced tomatoes with green chilies, chili powder, cumin, salt, and pepper.
  • Cover the skillet and let it cook for about 20-25 minutes, stirring occasionally, until the potatoes are tender.
  • Before serving, garnish with fresh cilantro to add a burst of flavor and color.

Notes

Feel free to swap out ground beef for turkey or even a meat alternative for a lighter or vegetarian option. This dish can be served with warm tortillas, over shredded lettuce, or paired with avocado or sour cream.
