Ingredients
  

For the Filling

  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup cream cheese, softened Leave out at room temperature for easy mixing.
  • 1/4 cup green onions, chopped Can substitute with finely chopped herbs like dill or parsley.
  • 1 teaspoon garlic powder
  • 1 large tortilla or wrap Can use a gluten-free wrap if needed.
  • to taste salt and pepper

Preparation

  • In a mixing bowl, combine the chopped spinach, feta cheese, softened cream cheese, green onions, garlic powder, and a sprinkle of salt and pepper. Stir until everything is evenly mixed.
  • Take your large tortilla and spread the spinach and feta mixture evenly over it.
  • Starting from one end, roll the tortilla tightly into a log shape.
  • Slice the rolled tortilla into bite-sized pinwheels, revealing the lovely spirals inside.
  • Serve immediately, or cover with plastic wrap and refrigerate until you’re ready to enjoy.

Notes

These pinwheels are best enjoyed fresh, but can be made a few hours ahead of time. Store leftovers in an airtight container in the refrigerator for 2-3 days. Freezing is not recommended.
