Ingredients

  • 4 large eggs room temperature, for best results
  • 1 cup of sugar adds just the right amount of sweetness
  • 1 cup of cake flour for a light, airy texture
  • 1 tsp of baking powder helps the pie rise and stay fluffy
  • 1/4 cup of unsalted butter melted, for richness
  • 1 tsp of vanilla extract for that warm, comforting flavor
  • 1/4 cup of milk for moisture and tenderness

Optional Toppings and Variations:

  • Whipped cream to add a touch of creaminess
  • Fresh berries for a burst of freshness
  • Chocolate drizzle for a decadent finish
  • Cinnamon or nutmeg to spice it up

Instructions

Preheat the Oven

  • Set your oven to 350°F (175°C) and let it warm up while you prep the ingredients. This ensures your pie bakes evenly and perfectly.

Prepare Your Pan

  • Grease a 9-inch pie dish with butter or cooking spray, then lightly dust it with a little cake flour. This will prevent the pie from sticking and make it easy to slice once baked.

Whisk the Eggs and Sugar

  • In a large mixing bowl, beat the eggs and sugar together until the mixture becomes light and fluffy. This can take about 5-7 minutes using an electric mixer on medium-high speed. The goal is to incorporate air into the batter to help the pie rise and stay fluffy.

Add the Dry Ingredients

  • Sift the cake flour and baking powder into the egg mixture, gently folding it in with a spatula. Be careful not to deflate the batter by overmixing—just fold until it’s fully combined.

Incorporate the Wet Ingredients

  • Melt the butter and allow it to cool slightly. Once cooled, add the melted butter, milk, and vanilla extract to the batter. Gently fold them in to combine, creating a smooth, airy batter.

Bake the Pie

  • Pour the batter into your prepared pie dish. Smooth the top with a spatula, and pop it in the oven for 30-35 minutes. The pie should be golden and firm to the touch, but still a bit wobbly in the center.

Cool and Serve

  • Once baked, remove the pie from the oven and allow it to cool in the dish for 10-15 minutes. Then, transfer it to a wire rack to cool completely. This helps it set and makes slicing easier.
