Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon

Wet Ingredients

  • 1 large egg
  • 1 1/8 cups granulated sugar
  • 1/2 cup vegetable oil
  • 2 tbsp buttermilk (or milk as a substitute)
  • 1 tsp vanilla extract
  • 3 very ripe bananas, mashed

Optional Ingredients

  • 1/2 cup walnuts, chopped Can substitute with chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x5 inch loaf pan.
  • In a bowl, whisk together the flour, baking soda, salt, and cinnamon. Set this mixture aside.
  • In another large bowl, beat together the sugar and egg until light and fluffy.
  • Add the vegetable oil, buttermilk, and vanilla extract; mix until well combined.
  • Incorporate the mashed bananas into the mixture.
  • Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  • If using walnuts, fold them in gently.
  • Pour the batter into the prepared loaf pan and smooth the top.

Baking

  • Bake for 60-65 minutes or until a toothpick inserted comes out clean.
  • Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Best served with butter or honey and pairs well with coffee or tea. Can be stored airtight at room temperature for up to 3 days, refrigerated for up to a week, or frozen with parchment paper between slices.
