Ingredients
  

For the Cheesecake Filling

  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, whipped Ensure it's whipped until peaks form

For the Crust and Topping

  • 1 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • 1 cup strawberries, chopped Fresh strawberries work best

Preparation

  • In a large mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until it's smooth and creamy.
  • Gently fold in the whipped cream into the cream cheese mixture until well combined.
  • In another bowl, combine the graham cracker crumbs and melted butter. Stir until the mixture becomes crumbly.
  • Layer the graham cracker mixture at the bottom of individual serving cups.
  • Add a dollop of the cheesecake filling, and then top with the chopped strawberries.

Chilling

  • Chill the assembled cups in the refrigerator for at least 1 hour before serving.

Notes

These Strawberry Cheesecake Cups can be stored in the refrigerator for up to three days. Keep strawberries separate until ready to serve for optimal freshness. Add chocolate sauce or other fruits for variations.
