Dry Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour Can substitute with whole wheat flour or all-purpose flour.
  • 1/2 cup maple syrup or agave nectar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/3 cup coconut oil, melted Can replace with unsalted butter or light olive oil.
  • 1 teaspoon vanilla extract
  • 1 cup strawberry filling (fresh strawberries or jam) Ripe strawberries are preferred.

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan generously.
  • In a large mixing bowl, combine the rolled oats, almond flour, baking soda, and salt. Mix until well combined.
  • In a separate bowl, melt the coconut oil. Add in the maple syrup and vanilla extract and whisk together.
  • Pour the wet mixture into the dry ingredients and stir until everything is fully incorporated.
  • Press half of the mixture firmly into the bottom of your greased baking pan.
  • Spread the strawberry filling evenly over the base layer, ensuring it covers the entire surface.
  • Crumble the remaining oatmeal mixture over the strawberry layer to create a topping.
  • Bake in the preheated oven for 25-30 minutes, or until the top turns a beautiful golden brown.
  • Allow the bars to cool completely before cutting them into squares for serving.

Notes

These bars can be served warm with yogurt or ice cream. Store in an airtight container; they stay fresh for about 3 days at room temperature or a week in the refrigerator. For longer storage, freeze wrapped individual bars for up to 3 months.
