For the base and topping

  • 2 cups rolled oats
  • 1 cup all-purpose flour Consider whole wheat flour for a healthier twist.
  • 1/2 cup brown sugar You can use a natural sweetener as a substitute.
  • 1/2 cup butter, melted Ensure the butter is properly melted to bind the mixture.
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract

For the filling

  • 1 cup strawberry jam Feel free to swap for raspberry or apricot jam.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  • In a large mixing bowl, combine the rolled oats, flour, brown sugar, melted butter, salt, baking soda, and vanilla extract. Stir until the mixture is crumbly.
  • Press half of the mixture firmly into the bottom of the greased pan to create a crust.
  • Spread the strawberry jam evenly over the crust, making sure to cover all corners.
  • Crumble the remaining oat mixture over the jam layer, creating a delicious topping.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until the top turns golden brown.
  • Allow them to cool before cutting into squares and enjoy!

Notes

These bars can be served warm with vanilla ice cream or alongside a cup of tea. They can be stored in an airtight container at room temperature for up to three days or in the refrigerator for up to a week. These bars freeze beautifully when wrapped tightly.
