Preparation

  • In a medium pot, combine the chopped strawberries, sugar, and lemon juice. Stir them gently to coat the strawberries evenly.
  • Set the pot over medium heat and bring the mixture to a gentle boil. Stir regularly to keep the strawberries from sticking.
  • Once it reaches a boil, lower the heat and let it simmer for about 20 to 23 minutes, or until the sauce thickens to your liking.
  • Remove the pot from heat and let the sauce cool to room temperature. It will continue to thicken as it cools.
  • Transfer the sauce to an airtight container and store it in the refrigerator for up to a week or freeze it for up to three months.

Notes

For a chunkier sauce, medium-chop the strawberries; for a smoother consistency, blend after cooking. Store in an airtight container.
