  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Butter and Fruits

  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup fresh strawberries, hulled and chopped

Wet Ingredients

  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract

Glaze

  • 1 cup powdered sugar
  • 1-2 tablespoons milk (for glaze)

Preparation

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  • Cut in the cold butter until the mixture resembles coarse crumbs.
  • Gently fold in the chopped strawberries to ensure they’re evenly distributed.
  • In a separate bowl, mix the heavy cream and vanilla extract, and then incorporate it into the dry ingredients, stirring until just combined.
  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them about two inches apart.
  • Bake for 15-18 minutes or until the edges turn golden brown.
  • Allow the cookies to cool on a wire rack.
  • For the glaze, whisk together powdered sugar and milk until you reach the desired consistency, then drizzle it over the cooled cookies.

Notes

For the best results, ensure your butter is very cold when mixing. Adding lemon zest can enhance the strawberry flavor. These cookies can also be served with ice cream or whipped cream for an elegant dessert.
