Preparation

  • Cook pasta according to package instructions. Once done, drain and set aside to cool.
  • In a large mixing bowl, combine the chopped spinach, sliced strawberries, thinly sliced red onion, feta cheese, and your choice of chopped nuts.
  • Once the pasta has cooled down, add it to the salad mixture and toss everything gently to combine.
  • Drizzle with balsamic vinaigrette, then season with salt and pepper to taste. Toss again to ensure everything is evenly coated.
  • Serve immediately, or if you prefer, refrigerate it for an hour to let the flavors meld.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2-3 days. Best enjoyed fresh. Consider adding a splash more of balsamic vinaigrette when serving leftovers.
