Ingredients

For the cake

  • 1 box vanilla cake mix Use your preferred brand.
  • 3 pieces eggs
  • 1 cup water

For the soaking

  • 1 cup sweetened condensed milk
  • 1 cup berry sauce Made from mixed berries cooked down with sugar.

For the creamy filling

  • 8 oz cream cheese, softened Ensure it's at room temperature.
  • 1 cup powdered sugar
  • 1 cup heavy whipped cream

Topping

  • 2 cups fresh mixed berries (strawberries, blueberries, raspberries) Use any combination of your favorite fresh berries.

Instructions

Preparation

  • Preheat your oven and prepare the vanilla cake according to the package instructions. Bake it in a 9×13-inch pan and allow it to cool completely.
  • Once cooled, use the end of a wooden spoon to poke holes in the cake at even intervals.
  • Drizzle the sweetened condensed milk over the cake, letting it soak into the holes for extra moisture and sweetness.
  • Prepare your berry sauce by cooking mixed berries with sugar until it thickens. Pour this beautiful sauce over the cake evenly.
  • In a mixing bowl, beat the softened cream cheese and powdered sugar until smooth. Then, gently fold in the heavy whipped cream until fully combined to create a fluffy cheesecake filling.
  • Spread this creamy mixture generously over the cake.
  • Finally, adorn the top with fresh mixed berries for that stunning summer look. Refrigerate for at least two hours before serving to allow all those flavors to meld.

Notes

For best results, ensure cream cheese is at room temperature to avoid lumps. You can substitute berry sauce with your favorite jam or puree.
