  • 1 lb ground beef Can substitute with turkey or a vegetarian alternative.
  • 1 medium onion, chopped
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 cup frozen mixed vegetables Feel free to use any available vegetables.
  • 28 oz frozen tater tots Standard package size.
  • 1 cup shredded cheddar cheese Substitute with other cheeses if desired.
  • to taste Salt and pepper

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground beef and chopped onion until the beef is nicely browned. Make sure to drain any excess fat.
  • Stir in the cream of mushroom soup and frozen mixed vegetables, blending everything well.
  • Spread the beef mixture evenly in a greased casserole dish.
  • Layer the tater tots on top, making sure to cover the mixture evenly.
  • Bake in the preheated oven for about 30 minutes.
  • Take it out, sprinkle shredded cheddar cheese over the top, and return it to the oven for an additional 10 minutes or until the cheese is melted and bubbly.
  • Let it cool slightly before serving. Enjoy!

Notes

Can be served with a side salad or crusty bread. For added flavor, consider topping it with diced green onions or sour cream.
