Marinade Ingredients

  • ½ cup extra virgin olive oil
  • ½ cup balsamic vinegar
  • ¼ cup low-sodium soy sauce Opt for low-sodium for healthier choice.
  • ¼ cup Worcestershire sauce
  • cup lemon juice
  • ¾ cup brown sugar You can substitute with honey or maple syrup.
  • 2 teaspoons dried rosemary
  • 2 tablespoons Dijon mustard
  • to taste Salt and pepper

Chicken

  • 6 pieces chicken breasts or 3.5 lb chicken This marinade works well for any chicken cut.

Preparation

  • In a large mixing bowl, combine the olive oil, balsamic vinegar, soy sauce, Worcestershire sauce, lemon juice, brown sugar, dried rosemary, Dijon mustard, salt, and black pepper. Whisk until everything is well blended.
  • Reserve half a cup of this marinade for later use.
  • Place the chicken in a resealable bag and pour the remaining marinade over it. Seal the bag and gently massage it to ensure the chicken is evenly coated.
  • Refrigerate for at least 30 minutes, but for optimal flavor absorption, consider marinating for up to 24 hours.

Notes

Serve marinated chicken with fresh salad, roasted vegetables or creamy mashed potatoes. Freeze any leftovers in an airtight container.
