For the dough

  • 2 cups corn masa
  • 1 cup refried beans Store-bought options can be used.
  • 1/2 teaspoon salt
  • as needed Water To create a pliable dough.

  • salsa, avocado, cilantro, etc. Feel free to customize your toppings.

Preparation

  • In a bowl, combine the corn masa with salt and mix in enough water to create a pliable dough.
  • Take a small portion of the dough and shape it into an oval using your hands.
  • Place a spoonful of refried beans in the center of the oval and fold the masa over, reshaping it back into an oval to encase the beans.

Cooking

  • Preheat a griddle over medium heat.
  • Cook the tlacoyos for about 4-5 minutes on each side, or until they are lightly charred and cooked through.
  • Serve hot with your favorite toppings, such as fresh salsa or creamy avocado.

Notes

Store cooked tlacoyos in an airtight container in the refrigerator for up to 3 days. To reheat, warm them on a skillet over medium heat. Uncooked tlacoyos can be frozen for up to a month.
