  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder

Wet Ingredients

  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 1/2 cups brown sugar Adjust sweetness if desired.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract

Main Ingredients

  • 3 cups rolled oats
  • 1 cup chocolate chips Substitutions can include dried fruit.
  • 1 cup chopped nuts (walnuts or pecans) Can be substituted with seeds or dried fruit.

Preparation and Baking

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together the flour, baking soda, and baking powder; set aside.
  • In a large bowl, cream the softened butter, brown sugar, and egg together until smooth and fluffy.
  • Stir in the vanilla extract and almond extract until well combined.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing until just incorporated.
  • Fold in the rolled oats, chocolate chips, and chopped nuts until evenly distributed.
  • Drop spoonfuls of the cookie dough onto ungreased cookie sheets, spacing them about 2 inches apart.
  • Bake in the oven for about 10 minutes or until the edges are golden brown and the centers are set.
  • Allow the cookies to cool on wire racks before enjoying!

Notes

Store in an airtight container at room temperature for about a week. Can also be frozen for extended storage.
