White Chicken Lasagna Soup

Ingredients
  

For the soup

  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts or thighs, diced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 cups milk or half-and-half
  • 2 cups baby spinach leaves
  • 8 pieces lasagna noodles, broken into pieces
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup ricotta cheese
  • 1 tsp dried basil
  • ½ tsp dried oregano
  • ¼ tsp crushed red pepper flakes optional
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Preparation

  • Heat olive oil in a large soup pot over medium heat. Add diced chicken and cook for 6 to 8 minutes until lightly browned and cooked through. Remove from the pot and set aside.
  • Add chopped onion and garlic to the same pot. Cook for 3 to 4 minutes until fragrant and softened.
  • Pour in chicken broth and season with basil, oregano, red pepper flakes, salt, and pepper. Stir well and bring to a gentle boil.
  • Break lasagna noodles into smaller pieces and add to the pot. Cook for about 10 minutes until tender, stirring occasionally to prevent sticking.
  • Lower the heat, return the cooked chicken to the pot, and pour in milk or half-and-half. Stir gently and let the soup simmer for 5 minutes.
  • Stir in mozzarella, Parmesan, ricotta, and spinach. Cook for another 3 to 4 minutes until the cheese is melted and the spinach is wilted.
  • Ladle into bowls, garnish with fresh parsley, and top with extra Parmesan cheese if desired.

Notes

Make it lighter: Use low-fat milk and part-skim cheeses for a lower-calorie version that still feels creamy. Add more flavor: A pinch of nutmeg or a splash of lemon juice enhances the richness of the sauce. Store leftovers in an airtight container in the refrigerator for up to 4 days. Add a bit of broth or milk when reheating to maintain the soup’s creamy consistency. Pair with toasted garlic bread or a crisp green salad for the perfect comforting meal.
